Our Favorite Kiwi Recipes
With the summer and festive season fast approaching, our minds are already elsewhere – dreaming of long days spent soaking up the sun and a fair few indulgences on the menu! A favourite pastime of many Kiwis is whipping up some delicious meals and treats to enjoy together, whilst spending time holidaying in an idyllic spot in New Zealand.
We thought we’d share a few absolute classic kiwi recipes perfect for sharing at a bach together… prepare your palettes and thank us later for the deliciousness found below!
1. Chelsea Winter – Cheese Scones
Behold Chelsea Winter’s legendary recipe! Chelsea exclaims that “people can’t get enough of this recipe – the number of people who’ve said they’re the best banana chocolate chip muffins they’ve ever made overwhelms me!”. That’s good enough for us to give these a go. Scrumptious, easy to make and a fun recipe for the kids to get involved with. 2. Cheese & Marmite Scrolls
A savoury classic! Best served fresh out of the oven and ideal for a quick bite to eat in between time spent at the beach and bach (or bring some with you for a picnic). Get the kids involved to make these ones too and you’ve got a win-win!
3. Anzac Biscuits
No kiwi summer getaway is complete without the addition of some perfectly chewy Anzac biscuits. Here’s the best recipe for the way Annabel Langbein likes to eat them – crispy on the outside and a little chewy in the middle (who else is getting hungry at the thought?!). Whether you like your biscuits thin and crispy or chunky and chewy, you can adjust the recipe to make them just how you like them.
4. Potato Salad
A family favourite, and especially easy to make. The classic potato salad only needs 5 ingredients, and you can experiment with adding your own personal touch with the additions of crumbled feta, semi-dried tomatoes or smokey chorizo for example! Sure to be a crowd pleaser amongst you and your group at the bach this summer.
5. Ginger Crunch
Crunchy, dangerously sweet and absolutely addictive. Make yourself a cup of tea or coffee and indulge in a square – or three! Simple to bake and a little too easy to eat as well. Store in an airtight container in the fridge at the bach to keep everyone’s sweet tooths in check for up to a week (what’s the bet it won’t last 2 days!).
6. Very Cheesy Cheese and Spring Onion Scones
A good cheese scone is hard to beat and there’s something about them that just warms the soul. Make them as cheesy as your heart desires and serve warm with lashings of butter.
7. Maple Mustard Lamb Skewers
This maple mustard lamb skewers recipe is a fantastic family favourite. Throw them on a chargrill pan or BBQ for an easy tasty dinner. Best served with a chunky tabbouleh, tzatziki and some flatbread. Enjoy!
8. Edmonds Original Shaker Pancakes
What’s better than waking up to the smell of pancakes on the weekend in a beautiful holiday destination?! Delicious, light and fluffy pancakes, ready in minutes. Grab your group a packet of the Edmonds Shaker Pancakes mix and simply add water, shake & cook! Top with some fresh berries and maple syrup to spice them up a little. Done.
9. Cheesy Bacon and Egg Pie
Dubbed by many as the best ever picnic pie and without a doubt a New Zealand favourite. Don’t forget to pack a bottle of tomato sauce in the picnic basket too if you’re heading out and about!
10. Fish Tacos with Fresh Pineapple Salsa
Chances are if you’re staying at one of our holiday homes throughout the country, you might’ve managed to get out on the water and caught some fresh fish! These tacos are a fun way to make the most of a fresh catch, and are simple and light for summer. Nadia Lim’s recipe includes a pineapple and chilli salsa which pairs fabulously with the fish, with the zingy flavours being offset by the avocado and sour cream – sold!
11. Chicken Burger with Avocado and Bacon
Its hard to go past a well-constructed burger at any time of the year, but they’re especially good enjoyed al fresco on a warm summers evening. Sink your pearly whites into this tasty combination of chicken, bacon, avocado + salad and serve with some cold beers out on the deck or lawn – bliss!
12. Noble Tasty Mac & Cheese
The perfect soul-warming weekend away treat. Loved by many; the classic mac & cheese pasta dish is sure to delight everyone in your group. Add in various meats or simply replace the meat with veggies such as onion and mushroom to make the meal vegetarian-friendly. Mainland suggests that this cheesy pasta goodness should be savoured with a nice glass of wine and with your feet up (we couldn’t agree more). Enjoy!
13. Chocolate Self Saucing Pudding
Self-saucing chocolate pudding has got to be one of the best desserts there is out there. It’s also great for a fuss-free dish if you’re in a hurry, or if you’re a bit weary after a long day out in the sun! Taking just ten minutes to prepare, sit back and enjoy the mouth-watering smell of chocolatey goodness baking away in the oven waft through your holiday home. Whip up some cream or add a generous scoop of ice cream to melt away on top.
14. One-Pan Hash Brown Breakfast Bake
For the perfect café-style brunch served at your bach, try this hash brown breakfast bake recipe. All created in a single pan, this hearty meal combines hash browns, veggies, eggs and feta to create a delicious start to the day. Serve with extra thyme sprinkled over the top and some toast.
15. Brandy Snaps
The tried and trusty brandy snap – a festive season must, or any time of the year for that matter. Edmonds describes them as the perfect crunchy vehicle for whipped cream, and say they keep well in an airtight tin, but fill them just before serving to keep them snappy. Delicious and oh so simple.
16. Chicken, Cranberry and Brie Pizza
This list wouldn’t be complete without a seriously good pizza recipe! Chelsea Winter says the secret’s to this dish is her epic homemade pizza sauce, which she’s blinged out with scrumptious cranberries. It’s tart, it’s tangy, it’s sweet, it’s ultra-tasty – and it’s the perfect partner to all that beautiful melty cheese and chicken. We couldn’t agree more with Chelsea that there’s not really much more to say here except enjoy, friends!
